If you own a restaurant it’s incredibly important to manage food allergies in your business. Neglecting could lead to prison time and business closure, as in the recent incident in North Yorkshire, resulting in a 6 year jail sentence for the restaurant owner.

Many allergens are hidden where you would least expect them to be, so it is essential that you are familiar with the contents of EVERY ingredient (eg Worcester sauce usually contains anchovies = fish).   Examine the ingredient packaging carefully or check with your supplier.  It is also important to prevent cross contamination when preparing foods that can cause allergic reactions.

Make sure all your staff are aware of these allergens and know the contents of dishes (or can quickly check) when questioned by customers.  This includes the oil that food is cooked in, dressings, seasoning and sauces.

Environmental Health Officers will be even more stringent with enforcement now. Non compliance could result in prosecution and a fine of up to £5,000. Disregarding the law comes at an even higher price.
