Good management of your ice machine is essential for great tasting drinks. And remember, your Environmental Health Inspector will always want to check the cleanliness of your ice machine. An ice machine with black mould inside will affect your hygiene rating.
To keep your drinks tasting great, make sure you don’t overlook your cleaning regime for your ice machine.
Problems to look out for in your machine are:
- black mould growth inside the machine ice chute
- black mould or slime on the curtain and sides of the inside of the machine,
- ice with “bits” in.
How to keep your ice machine in tip top condition
Each week empty machine, wash with hot soapy water, paying attention to the curtains and ice chute. Next, sanitise – spray with sanitiser and wipe with blue roll for additional cleaning then spray with sanitiser and leave for the full contact time. Follow sanitiser instructions, normally anywhere between 30 seconds to 5 minutes. Then refill machine.
Keep your ice scoops in a separate container so the scoop handle does not come into contact with the ice. If you use a sanitiser solution in your scoop container, it must be renewed each day. It is good practice to put your ice scoop through the dishwasher daily.
