One of the golden rules of food safety is to keep ready to eat foods separate from raw food.

What is wrong in this photo?   Answer – Ready to eat foods are being prepared alongside raw foods so there is a very big chance of cross contamination.

Raw foods should always be prepared separate from ready to eat foods.

Storage:

Store ready to eat foods above raw foods

Preparation:

Prepare raw foods on a separate table (or at a different time) from ready to eat foods.

Use the correct colour chopping board for the task.

Store your red, blue and brown chopping boards (designated for raw foods) separate from your white, yellow and green boards (designated for ready to eat foods).

Use a red handled knife for raw meat and poultry prep and keep separate from other knives.

Use a blue handled knife for raw fish prep and keep separate from other knives.

Keep red utensils such as tongs separate from yellow utensils.

Alert

Clean and sanitise worktops, chopping boards and knives between tasks using blue roll and sanitiser.
